The care in the vineyard and the environmental characteristics lead to strong and full-bodied wines.. like the people of Romagna.

In the cellar, fermentation and the subsequent evolution of red wines are made in wood barrels, as in the truest tradition of Romagna. White wines, on the other hand, are not obtained by the pressing of the grapes, but, as they did in the past, by the so-called "alzata di cappello" (hat raising): after crushing and destemming, the grapes are put to ferment in steel tanks with selected yeasts that, as soon as the skins bring on top of the fermentation, are removed and the fermentation goes on clean must.

For fermentation, selected yeasts are used, by avoiding handling too much wine to preserve the most of its naturalness; and its expression of the territory.
